Butter beans are having a real moment right now! I've seen a few delicious butter beans dishes on restaurant menus recently, and it got me thinking about a unique way to serve these tender beans. This butter bean salad is the simple answer!
There's nothing to cook here. We're making this salad using canned butter beans, and the dressing uses all fresh ingredients that you just whisk together and pour on top.
Easy peasy!
Serve butter bean salad as a side dish at cookouts and picnics. It's also a great main dish over pasta or with crusty bread to dip.

🍋 Ingredients and substitutions
- lemon juice - Also for the dressing base.
- sun dried tomatoes in oil - You're going to use the tomatoes and some of the oil to make this dressing. It gives it SUCH an amazing flavor!
- garlic - To make the dressing DELICIOUS! This is raw garlic, so multiply the amount here with caution, my garlic-loving friends.
- salt and black pepper - To season the dressing.
- fresh parsley and basil - Fresh herbs make this salad extra flavorful.
- vegan feta - You can omit this from the salad or replace it with sunflower seeds, chopped almonds, or other nuts, if you prefer, but I love the creamy saltiness that feta adds to this mix!

- Add all of the ingredients to a mixing bowl.

- Toss well to coat.

Ingredients
- 15 ounce can of butter beans drained and rinsed
- 2 tablespoons oil from a can of sun-dried tomatoes
- 2 tablespoons lemon juice
- 2 cloves garlic minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons minced fresh basil
- 2 tablespoons minced fresh parsley
- ¼ cup sliced sun dried tomatoes drained
- 2 ounces vegan feta cheese crumbled
Instructions
- Add all of the salad ingredients to a mixing bowl, and toss well to coat the butter beans in all of the other ingredients.
