Before we get to the show notes, I wanted to thank everyone who reached out about last week's episode. Last week, I confessed that I could never see Magic Eye paintings, and apparently I'm not the only one! I feel so much less alone.
I also wanted to share some exciting news: my sister had her baby! The baby is perfect and precious, and I can't wait until it's safe to travel and squeeze her.
OK, let's get to it!
Vegan beefy chili
On recording day, we had chili for lunch. If you listen to the show, you know that I love chili! It felt like we needed to shake up our chili game, though.
Luckily, I remembered that we had a bag of frozen vegan beef crumbles in the freezer. So, I made my three bean Instant Pot chili but replaced one of the cans of beans with the bag of frozen crumbles.
Y'all, it was so good! The kid raved about it, and I'm definitely making this way again. No need to saute the crumbles. Just add them when you add the beans and canned tomatoes. It will cook up perfectly.
We topped the chili with jarred roasted garlic salsa, which Dave did not care for. I thought the smokiness was nice, though. A personal taste thing!
We got a letter!

I'm listening to your Podcast right now and I was laughing because I'm too scared to watch the Saw the movies so I looked up the summaries just like Dave. I didn't think anyone else did that! Anytime there's a scary movie that looks interesting I look up summaries because I can't do scary.

Beyond sausage links review
At the grocery store a few weeks ago, I snagged a package of Beyond Sausage Breakfast Links, and Dave made them in the air fryer for our Sunday grit bowl brunch.
The bowls had grits, the Beyond Sausage Breakfast Links, Just Egg, corn, and waffle fries. Wow, decadent! Normally, we'd add a veggie and some sliced avocado, but it was grocery day, so our produce drawer was basically empty.
We've reviewed the Beyond Sausage Breakfast Patties before, but the links are new and exciting!
The breakfast sausage links are smaller than a full-sized Beyond Sausage. Maybe around a third of the size?
I loved these. They had that signature Beyond Sausage flavor and texture. To me, they really felt like a miniature version of their brat links with a little bit of a breakfasty flavor.
Dave wasn't as big a fan, shockingly! He's infuriated that I compared them to full-sized Beyond Sausages at all. He thought these were missing both the texture and flavor of full-sized Beyond Sausage.
He called them mushy!
Honestly, Dave thinks he was eating a full different meal from what I ate.
How to microwave liquid Just Egg
He also has rediscovered a love for liquid Just Egg. We'd gone on about loving frozen Just Egg patties in our very first episode of this podcast. But Dave now makes the liquid kind in the microwave, and it has changed the game.
To make them in the microwave, squeeze a serving's worth of Just Egg into a mug. Then, microwave on high for 35 seconds. Stir it up, and microwave for 30 more seconds.
Boom! Fluffy, scrambled Just Egg.
For the grit bowl, Dave upped the egg amount to three servings, since there are three of us. He said that it took less than three minutes. He did two rounds of a minute each, stirring in between. And then it sounds like maybe 30 more seconds? It was hard to nail him down.
I'd recommend doing 15-30 seconds at a time after that first two minutes, and check and stir in between. The point is, you can do multiple servings all in one microwave-safe container, and it's fast, and it works.
Dave also had an important tip: soak whatever container you used immediately. This stuff sticks like glue if you don't soak!
