- baby bok choy - This is different from bok choy. Baby bok choy have small heads, and you could hold one in your hand. Bok choy are the big boys, and they won't work as well in this recipe. Slice your baby bok choy in half, lengthwise. If they are really oversized, you might even want to quarter them.
- ginger chili tahini sauce - This is a super easy blender sauce based on my spicy tahini dressing. Use fresh or powdered garlic and ginger along with sweet chili sauce, tahini, soy sauce, lime juice, and crushed red pepper flakes for a creamy, tangy dressing with a hint of sweetness.
- garnishes - I like to top roasted baby bok choy with some sesame seeds for protein and crunch.

🔪 How to Make Baked Baby Bok Choy
Preheat the oven to 450° F and line a baking sheet with parchment paper. Trim and slice your baby bok choy, if you haven't already.
Arrange the baby bok choy on the baking sheet, making sure they don't overlap. Spray with oil. Bake the baby bok choy for 10 minutes, then flip them over, spray the other side with oil, and bake for 5 more minutes.


Meanwhile, add all of the sauce ingredients to your blender, and blend until smooth.


When the roasted baby bok choy is ready, serve it drizzled with the sauce. Sprinkle on sesame seeds, if you're using them.


💡 Helpful Tips
- Prep the baby bok choy while the oven preheats and make the sauce while it roasts to save time in the kitchen.
- Make sure that you are using 4 baby bok choy, not regular bok choy, which is much larger.
- Stir your tahini well before adding it to the blender. Tahini separates, and stirring ensures the best results.
- You will likely end up with extra dressing. I didn't reduce the amount further, because blenders often have trouble working when there isn't enough food in there.
