These vegan Biscoff baked oats are based on the popular TikTok baked oats, but instead of a single serving, we're making enough to share! Because why would you keep all of that Biscoff goodness to yourself?

These oats keep for four to five days in the fridge, so you can make a panful to eat for breakfast all week long! Just slice and then warm in the microwave, and you're ready to go.
These baked oats are different from other baked oatmeal. Instead of leaving the oats whole, you blend them up with all of the other ingredients, then bake that batter. The result is basically a breakfast pastry.
This baked oats recipe uses no banana or egg replacer. Instead, you're basically making a flax egg right in the blender by blending up flax meal with the liquid ingredients.
Ingredients and substitutions
- rolled oats - You want old fashioned oats, the kind that has a 5-minute cooking time listed on the package.
- non-dairy milk - Choose your favorite! Some non-dairy milks can be sweet, so you may want to start with less maple syrup, if your milk is sweetened, then add it to taste.
- flax meal - This is your binder that helps the Biscoff baked oats come together.
- maple syrup - To sweeten, but this is also adding liquid. If you do back off on the maple syrup, add that amount of non-dairy milk, so your baked oats won't be dry!
- vanilla extract and cinnamon - These team up to give the oats a Biscoff-like flavor.
- baking powder and salt - To condition the batter.
- cookie butter - Dollops of cookie butter make these Biscoff baked oats SO decadent! You can also drizzle melted cookie butter on top of the oats after baking.
- Biscoff cookies - These are an optional topping, but I do love the visual and the texture that they add to this recipe!
How to make Biscoff baked oats
Preheat the oven to 350° F.
Add the oats, milk, flax, maple syrup, vanilla, cinnamon, baking powder, and salt to your blender and puree until smooth. Pour into a greased 8x8" baking dish.
Drop cookie butter by the teaspoon all over the batter.
Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. When you do the toothpick test, make sure you aren't stabbing in a spot that has cookie butter in it.
Remove from the oven and let it cool for 10 to 15 minutes. Meanwhile, warm up some more cookie butter in the microwave, if using, and drizzle it all over the top. Sprinkle on crushed Biscoff cookies or stick cookie pieces right into the baked oats. Or do both! Slice and serve.
Helpful tips
- Vegan milks can vary a lot in how sweet they are. If your milk is sweetened, start with half of the maple syrup, then taste the batter. Add more maple syrup, to taste, then make up the difference with more plant-based milk, since the maple syrup is also adding moisture to the mixture.
- When you're testing the oats to see if they're done cooking, make sure that you insert the toothpick into a spot that doesn't have cookie butter. The cookie butter is

Store leftovers right in the baking pan (cover with foil) or sliced into airtight containers.
Reheat slices in the microwave, or serve them cold or at room temperature.

The base for these is firmly made of whole food ingredients, like whole oats and flax meal, but you'll have to decide for yourself about how many cookies you can eat for breakfast and still call it healthy. What they are is DELICIOUS!
Use rolled oats for this recipe. Steel cut just plain won't work, and since quick oats are broken down more, you'll end up with dry results, because you'll end up using too much.
