This super easy and delicious s'mores bark is loaded with mini marshmallows and graham cracker pieces. And it uses a trick to make melting the chocolate less messy!

I love chocolate bark! Last year, I got really into making it around the holidays and made tons of batches of my pistachio chocolate bark and chocolate peanut butter pretzel bark.
The only drawback to making chocolate bark is the cleanup. Whether you melt your chocolate chips in the microwave or in a double boiler, cleaning cooled, melted chocolate off of a container is a real hassle.

So, for this s'mores bark recipe, I tried out a new method I've been seeing for melting chocolate chips in the oven. The chocolate chips melt on the same lined baking sheet that you use to assemble and chill your chocolate bark, which means the same, decadent chocolate treats with less cleanup!
This s'mores chocolate bark is absolutely delicious, super easy to make, and makes a great hostess gift for the holidays, too! If you have a kitchen torch, you can even toast the mini marshmallows for an even more traditional s'mores campfire experience.

- vegan chocolate chips - Choose soy-free, if needed. You can use dark chocolate or vegan milk chocolate chips in this recipe.
- vegan mini marshmallows - If you can only find full-sized vegan marshmallows, you can tear or cut them into smaller pieces.
- vegan graham crackers - You want to break these into pea-sized or slightly larger pieces. If you crumble them small, the flavor gets lost in the chocolate. Avoid honey in the ingredients of your graham crackers, since honey is not vegan. I find that store brand/cheap graham crackers tend to be vegan, because honey is expensive. Choose gluten-free, as well, if needed.
🔪 How to Make Vegan S'mores Bark
Preheat the oven to 170° F, or as close as you can possibly set it, if it doesn't get that low.
Line a baking sheet with parchment paper, and arrange the chocolate chips in the center. You want them in a single layer, but they should be very crowded together. Place the pan into the oven for 8 to 10 minutes, until the chocolate chips are melted. The chocolate chips won't look melted when they're ready, so you should poke them with a spoon or spatula to test them.


Use a rubber spatula to spread out the chocolate into an even, approximately ¼"-thick layer on your baking sheet. You want it between ⅛" and ¼". Too thick, and the chocolate will overpower your toppings. Sprinkle the graham cracker pieces and mini marshmallows evenly over your chocolate chips. If you have a kitchen torch, you can use it to carefully toast the marshmallows at this point.


Transfer the chocolate s'mores bark to the freezer to chill for at least half an hour. When it's completely cooled through, break your chocolate bark up into pieces, and either package them for gifts or store in a closed container in the refrigerator.

- The chocolate chips will be melted before they look melted, so nudge them with a spoon or spatula to test if they're ready.
- If you don't want to use this oven method, you can melt the chocolate chips in a double boiler or in 30 second bursts in a bowl in the microwave.
