This vegan s'mores cookies recipe is based on my super popular cookies and cream cookies. They are packed with creamy chocolate chunks, gooey marshmallow, and crunchy graham cracker pieces.

For this vegan s'mores cookie recipe, you will need vegan chocolate chips, marshmallows, and graham crackers. For the chocolate chips, look for allergy-friendly chocolate chips. You can usually find vegan marshmallows at specialty stores, like Whole Foods, Sprouts, or Trader Joe's. For the graham crackers, just choose a box without honey. Cheaper graham crackers are your best bet. Honey is expensive, so they leave it out.

🔪 How to Make S'mores Cookies
Preheat the oven to 375° F and line a baking sheet with parchment paper.
Combine the dry ingredients in a large bowl, mixing well. In a smaller bowl, mix wet ingredients until the sugars dissolve.


Pour the wet mixture into the flour mixture, and mix well.


Fold in the chocolate chunks and graham crackers. You should have a cohesive dough that you can form into balls at this point.


Form the dough into 14 1" balls and arrange the dough balls on a lined baking sheet, leaving about 2" of space between the cookies. Slice your marshmallows in half lengthwise, and place one on top of each cookie, cut-side-down, pressing gently, so it sticks.


Bake for 9 to 11 minutes, then cool for 5 minutes before moving them off of the baking sheet.

- You want to break the graham crackers up by hand, but don't crush them. You want lots of pea-sized chunks in there!
- If you can't find vegan chocolate chunks, use vegan chocolate chips instead.
- For the marshmallows, you'll have the best results if you slice them lengthwise. So, stand the marshmallow on a flat end, and slice top to bottom.
- Space out the cookies as much as possible on the baking sheet, because they do spread during baking.
