Have you tried baked oatmeal yet? It's such an easy breakfast that you can make ahead of even whip up day-of. And these PB&J air fryer baked oats are ready in about half the time it takes to bake them in the oven.
Plus, they serve one, so you can make them just for yourself without a ton of leftovers to deal with.
This air fryer baked oatmeal leaves the oats whole. Some recipes use the blender, and I do enjoy that method, too, but with PB&J, I like the added texture of whole ingredients.
Ingredients and substitutions
- rolled oats - Also called old fashioned oats, these are the type that cook up in five minutes.
- baking powder and salt - To condition the batter.
- flax meal - This is your binder. You're basically making a flax egg.
- vegan milk - Use your favorite creamy vegan milk!
- peanut butter - You're going to mix this into the batter and drizzle some on top of the finished air fryer baked oats.
- vanilla extract - Gives the oatmeal an amazing flavor!
- maple syrup - For moisture and sweetness. You can use agave nectar instead, if you prefer.
- blueberries - Fresh berries cook down to a jammy texture as the baked oatmeal cooks in the air fryer.
- preserves - Drizzle on a little bit of the jam or preserves of your choice as a topping!
How to make air fryer baked oatmeal
In a medium bowl, mix together the oats, baking powder, salt, and flax meal.
Add the vegan milk, peanut butter, vanilla extract, and maple syrup, and mix well. Then, stir in the blueberries.
Transfer the mixture to an 8-ounce, oven-safe ramekin, and cover with foil. Make sure that the foil doesn't go to the bottom of the ramekin, because you don't want it to scratch your air fryer basket.
Air fry at 350° F for 10 minutes, then carefully remove the foil and air fry at 350° F for another seven to 10 minutes, or until it's browned on top. Let it cool for five to 10 minutes.
Drizzle with the peanut butter and preserves, and serve.
Helpful tips
- Make sure that you mix everything together really well, so your oats cook up evenly.
- Tin foil can scratch your air fryer basket, if your basket is nonstick, so process with caution when you're using foil in the air fryer! Take it from someone who has had to replace her basket after scratching it.
Frequently asked questions
You sure can! They won't turn out like conventional oatmeal. Instead, you'll get baked oats, which you can eat with a fork, like a slice of cake. Breakfast cake!
Baking is essentially what an air fryer does. Think of the air fryer as a tiny, very efficient convection oven. Its small size allows the hot, circulating air to bake food faster than even a convection oven.
Baked oats are closer to a pastry than to conventional oatmeal. While you eat porridge-like oatmeal with a spoon, you can slice off bites of baked oats using the side of your fork, like you would cake.
