Why does lunchtime feel like a surprise every day? I'm honestly caught off guard by my body's midday need for food. This vegan buffalo chicken wrap is a delicious solution to what seems to be a daily problem for me.
I prefer using the air fryer to make the vegan buffalo chicken for these wraps, because it's so much faster and doesn't heat up the house. But if you don't have an air fryer, you can definitely cook the soy curls in the oven instead.
Either way, you end up with crisp, flavorful spicy results that pair perfectly with the other toppings in these wraps.

- soy curls - This is your chicken substitute. I order mine online straight from Butler Foods. If they don't ship to you or shipping is astronomical, you can use soy chunks instead.
- cornstarch - Helps the seasoning stick to the soy curls and helps them get a little crisp in the air fryer or oven.
- spices - Season the soy curls with onion powder, garlic powder, and poultry seasoning.
- vegan buffalo sauce - Some buffalo sauce contains dairy, so just avoid brands that do that.
- vegan butter - Helps the buffalo sauce cling to the vegan chicken.

- tortillas - You can use any kind of flour-esque tortillas you like. Gluten-free, sun dried tomato, spinach, etc. are all fine to use. Corn tortillas might taste a little weird, but I won't judge!
- celery - Because buffalo and celery were made to be together.
- onion and lettuce - For extra crunch and some umami flavor.
- vegan ranch - Can you even eat buffalo sauce without ranch? I think it's illegal? Try my cashew ranch dressing or tahini ranch dressing, which both go great with this. You can also use bottled vegan ranch, if you want to save time.
🥣 How to make buffalo chicken wraps

Soak the soy curls in hot water for five minutes.

Drain well and transfer back to the mixing bowl.

Sprinkle on the cornstarch and spices.

Toss to coat really well.

Transfer to your air fryer basket. Air fry at 375° F for 10 minutes, shaking once or bake at 375° F for 20 to 23 minutes, until they're browned and very crispy.

The soy curls are going to look dry at this point, but don't worry! We're about to fix that.

Melt the vegan butter and mix with the buffalo sauce. Toss with the soy curls.

Add to a tortilla with some lettuce, celery, and onion.

Top with vegan ranch.

Wrap and eat!

- The soy curls are going to look dry after baking/air frying, but don't worry! You're going to toss them in buttery buffalo sauce, which will fix that problem right up.
- Feel free to mix and match toppings to suit your tastes! Pickle slices, sliced tomato, and avocado are all great additions to vegan buffalo chicken wraps, for example!

The buffalo "chicken" soy curls will keep for four to five days in the fridge. Reheat them in the oven, air fryer, or microwave. The veggies will keep for two to three days, and the ranch will keep for a week or more, depending on what kind of ranch you use.

For the buffalo chicken
- 2 cups soy curls soaked in boiling water for 5 minutes
- 1 tablespoon cornstarch
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon poultry seasoning
- ½ cup vegan buffalo sauce
- 1 tablespoon vegan butter
For the wraps
- 4 tortillas flour, gluten-free, etc is fine
- 1 to 2 celery ribs chopped, or more, if you like
- ¼ cup sweet onion chopped, or more, if you like
- ½ cup shredded lettuce or more, if you like
- ¼ cup vegan ranch dressing divided
Instructions
Make the buffalo chicken
- Drain your soy curls and wring out the excess water. Transfer to a bowl, and sprinkle on the cornstarch and spices, tossing to coat the soy curls really well in all of the seasonings.
- Air fry at 375° F for 10 minutes, shaking once or bake at 375° F for 20 to 23 minutes, until they're browned and very crispy. The soy curls are going to look dry at this point, but don't worry! We're about to fix that.
- Combine the buffalo sauce and vegan butter in a small bowl in the microwave just to melt the butter. Toss the soy curls in the buttery sauce.
Make the wraps
- While the buffalo chicken cooks, prep your toppings and make your ranch dressing of choice (or use bottled vegan ranch).
- Divide the soy curls between your tortillas, and sprinkle on the veggies. Drizzle on plenty of vegan ranch dressing, roll up your wraps, and serve.
