This is my foolproof method for cooking perfect pasta every single time.
- Make sure your pot is large enough! If the pasta doesn't have enough room to move around, it will stick together and stick to the bottom. The box should tell you how much water you need to boil, which will help you choose the right size pot.
- Bring salted water to a rolling boil, then add the pasta, reduce the heat to medium, and partially cover the pot.
- Cook for the time listed on the package, making sure to check in after the shortest time in the listed range. So, if it says eight to 10 minutes, start tasting the pasta for doneness at eight minutes.
- Stir the pasta every two minutes, so it cooks evenly and doesn't stick.
- Drain, but do not rinse unless the recipe says to do so. To keep the pasta from sticking together, toss it with a teaspoon or two of oil, if it will be sitting unsauced for more than a few minutes.
