Y'all, between working, parenting, and making time to roller skate, washing dishes does not rank high on my to do list. That's why I love easy vegan one pot meals for dinner and for breakfast!
The recipes below all come together in a single pot or pan. Some use the Instant Pot or air fryer to make a whole, plant-based meal!

💡 Tips for Making One Pot Vegan Meals
- A good stove to oven pan unlocks so many one pot meal options! Invest in a 3.5-quart or larger Dutch oven. You won't regret it!
- Chances are, if you're making one pot meals, you're looking for ease, and having a well-stocked vegan pantry is key. Check out my vegan grocery list to help set you up for success.
- If there's time to lean, there's time to clean. One pot meals are all about minimizing cleanup, so use those idle moments during cooking to clean up. While the onions sauté, for example, can you wash the knife and put it away? My Nani Dorothy taught me to cook this way, because it's so much less stressful sitting down to meal knowing that the dishes are basically done.

Just because a meal is easy to make and doesn't dirty a lot of dishes doesn't mean it can't be tasty and special. The meals above are more than just easy. They're satisfying!
Having a pan that can go from stovetop to oven makes one pot cooking a breeze! You can saute, simmer, and bake, all in the same pot.
The stove to oven pan that I use is my 3.5 quart Le Creuset Dutch Oven. You can use other, similar-sized Dutch ovens in the same way. I love my Le Creuset because, while it's a bit of an up-front investment, this pot is built to last. My oldest Le Creuset pots is from 2006, and it's still in excellent shape!
