Beans are such a versatile ingredient. You can use them in soups, stews, chili, tacos, burrito bowls, salads, and for snacking. You truly could eat your beans with every meal, if you wanted to.
They're also packed with protein and fiber, and they're super affordable, whether you make them from scratch or buy them in a can.
🫘 How to Cook Beans from Scratch
You can cook dried beans from scratch in your Instant Pot or on the stovetop. Here's how!
- SOAK: Pour 1 pound of beans into a large bowl and pour on enough water to completely cover the beans. Stick them in the refrigerator to soak for 8 hours, up to overnight. Drain and rinse the beans. Soaking is optional for the Instant Pot.
- STOVETOP: Add the beans plus 1 ¼ teaspoons salt and any seasonings you want to use to a large pot. Add enough water to cover the beans plus about 2" extra. Bring to a boil, then reduce the heat and simmer for 40 to 50 minutes or more, until the beans are tender to preference.
- INSTANT POT: Add the beans to your Instant Pot with 1 ¼ teaspoons salt and your seasonings of choice. Pour in enough water to cover the beans with about an extra 1". Lock the lid, and cook at pressure with a 15-minute natural release. Soaked beans cook for 7-12 minutes, depending on the size of the bean. Unsoaked cook for 30 to 40 minutes.
- STORE: Store cooked beans in the refrigerator with the cooking liquid for 3 to 5 days. You can also freeze them for up to a year.
